Description

Sweet, savory, and utterly delicious! Learn how to make the best pineapple casserole with a cheesy, buttery cracker topping for any occasion.

Ingredients

  • Canned Pineapple: You can use chunks or tidbits, depending on your preference. The sweetness and acidity of the pineapple are the stars of the dish.
  • Flour: We need a bit of flour to thicken up the filling, preventing it from being too watery.
  • Sugar: Granulated sugar is great at offering that sugar rush that a cheese typically needs.
  • Sharp Cheddar Cheese: Cheese should be rich! Its sharp flavor fights back against the sweet pineapple and adds a savoury element.
  • Ritz Crackers: The buttery, crumbly crackers make the perfect topping, adding a delightful crunch.
  • Butter: Melted butter ties everything together and makes the cracker topping extra indulgent.

Instructions

1. Preheat Your Oven

Grab a casserole dish or square baking dish and preheat your oven to 350°F.

2. Prepare the Pineapple

Drain the pineapple tidbits, reserving ¼ cup of the pineapple juice for later. Set both aside.

3. Mix the Flour and Sugar

In bowl, add ⅓ cup of all-purpose flour and ½ cup of sugar. Stir until the mixture is smooth, with no clumps.

4. Combine Pineapple and Cheese

Add the drained pineapple and shredded sharp cheddar cheese to the mixing bowl with the flour and sugar mixture. Stir everything together until well coated.

5. Assemble the Casserole

Pour the cheesy pineapple mixture into your casserole dish and spread it out evenly.

6. Make the Buttery Cracker Topping

In a tiny bowl, melt the butter in either a microwave for 30 seconds or on the stovetop. While the butter melts, grab the sleeve of Ritz crackers and crush them into crumbs with your hands. Put the crushed crackers into a medium bowl and drizzle the melted butter on top. Add in the reserved pineapple juice and mix until fully combined.

7. Add the Topping

Now Spread all the buttery cracker crumbs over the pineapple pudding in the casserole dish evenly.

8. Bake to Perfection

Bake in the oven for 30–40 minutes or till it browns over and bubbles around the corners.

9. Serve and Store

Enjoy fresh from the oven or let it cool to room temperature before serving
