  3. Cajun Seasoning
  4. Ranch Dressing
  5. Toppings

Instructions

Making the Crispiest Oven-Baked Fries

For the perfect Voodoo Fries, you need a strong foundation. And that starts with crispy, golden fries. While frying is the traditional method, baking can produce fries that are just as crispy and delicious—without the mess or extra calorie

Cut the Potatoes

Peel 3–4 large potatoes and cut them into fry shapes, about ¾ inch thick and 3 inches long. However, for a more rustic look, you can leave the skins on.

Steam the Fries
Place the cut potatoes in a colander over a pot of boiling water. Let them steam for 10–12 minutes. This step is essential, as steaming softens the outer edges, which helps them crisp up in the oven.

Cool and Coat with Oil
After steaming, let the fries strain and cool a little. Pour oil into a bowl, and lightly toss the fries with the oil so they are evenly coated.

Arrange on a Baking Sheet
Spread the fries out in a single layer on a parchment-lined baking sheet. Overcrowding can lead to soggy fries, so make sure there’s some space between each piece.

Bake
Roast the fries in a hot oven at 425°F for 20–25 minutes, Turning them midway for even crispiness. The fries should be golden brown and crispy when done.

Preparing the Cheese Sauce

While the fries are baking, it’s time to whip up the cheese sauce. This rich, creamy topping is what takes Louisiana Voodoo Fries to the next level.

Make a Roux
Melt 2 tablespoons of butter in a saucepan over medium heat. Add 2 tablespoons of flour and whisk until smooth. Cook for about 1 minute.

Add Milk
Gradually pour in 1 cup of milk, whisking constantly to prevent lumps. Continue stirring until the mixture thickens slightly.

Add Cheese
Mix in the shredded cheddar cheese until fully melted and smooth. If you can stand heat, a pinch of cayenne or smoked paprika will enhance the flavor.

Notes

  • You can adjust the spice level by adding more or less paprika.
  • Serve with your favorite dipping sauce for extra flavor.
  • These fries can be made ahead and reheated for later enjoyment.
