- 1 tbsp dried rose petals (edible) – These are stunning for garnish. They add color and a subtle floral flavor.
- 1 tbsp chopped dates or figs – For a natural sweetness that complements the chocolate.
- 1/4 cup Kataifi pastry (pre-toasted) – Delicate and crispy for added texture.

Instructions
1.Prepare Your Workspace
Line your tray with parchment paper or prep your silicone mold to guarantee the chocolate doesn’t stick and is easy to remove once set.
2. Toast the Kataifi Pastry

Before beginning to assemble your chocolate bar, lightly toast the Kataifi pastry in a dry pan over medium-low heat until golden-brown in color and set aside to cool.
3. Melt the Chocolate
- Dark Chocolate: Break your dark chocolate into small pieces, placing them in a heatproof bowl. Melt using a double boiler method (over simmering water) or microwave, stirring every 15 seconds.
- White Chocolate: Melt the white chocolate separately. Be careful not to overheat.
4. Assemble the Chocolate Base

- Pour the dark chocolate mixture evenly onto a tray or mold.
- Drizzle the melted white chocolate on top and use a toothpick to swirl for a marbled effect.
5. Incorporate Tahini and Middle Eastern Flavors
