Ingredients
- 1 lb fresh lump crab meat (canned works too, but fresh is best)
- 1 cup heavy cream
- 3 egg yolks
- 2 tbsp cream cheese (softened)
- 1 tbsp Dijon mustard
- 1 tsp Old Bay seasoning (classic for seafood)
- 1 tsp Worcestershire sauce
- 1 clove garlic (minced)
- 1/4 cup grated Parmesan cheese
3 tbsp granulated sugar
- 1 tbsp grated Parmesan cheese (optional, for a savory kick)
Instructions
First things first—make sure you have the right tools. You’ll need small ramekins for baking and either a kitchen torch or a broiler for caramelizing the sugar.
Preheat your oven to 325°F. Then set up a water bath by placing a deep baking dish on your counter and filling it halfway with hot water. This helps the brûlée cook evenly.

Start by mixing together heavy cream, egg yolks, cream cheese, Dijon mustard, Old Bay seasoning, Worcestershire sauce and garlic in a medium-sized bowl until everything has come together in an even mixture. Next add salt and pepper as desired before checking to ensure an even mixture.

Carefully fold in the crab meat and Parmesan cheese. Be sure not to overmix—after all, you want those chunky bites of crab to shine through. In doing so, the texture will remain perfect and the flavors will stand out.

Divide the mixture evenly among your ramekins, filling them about 3/4 of the way. Subsequently, place the ramekins in a baking dish equipped with a water bath to ensure an even cooking environment and beautiful results.
Gently move the baking dish to the oven and bake for 25–30 minutes. The custard should be set but still have a slight jiggle in the center when you give it a gentle shake.
Once baked, remove the ramekins from the water bath and let them cool at room temperature for about 15 minutes. Then, pop them in the fridge for at least an hour to chill.
