Ingredients
- 2 cups graham cracker crumbs (cinnamon flavor is ideal!)
- 1/3 cup unsalted butter, melted
- 1/4 cup sugar
- 3 (8 oz) blocks of cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1/4 cup sour cream (adds creaminess!)
- 1 tsp vanilla extract
- 1/3 cup brown sugar
- 1 tbsp ground cinnamon
- 2 tbsp melted butter
- 4 oz cream cheese, softened
- 1 cup powdered sugar
- 1–2 tbsp milk
- 1/2 tsp vanilla extract

1: Prep Your Pan for the Perfect Cinnamon Roll Cheesecake
Preheat your oven to 325degF and begin by pre-greasing a 9-inch springform pan with parchment paper and lightly greasing its sides with butter or non-stick spray; this makes releasing your cheesecake easier later!
Combine graham cracker crumbs, sugar, and melted butter in a mixing bowl until they resemble wet sand in texture. Press this evenly across the bottom of your prepared pan before popping it in the oven for 8-10 minutes to set up.
Mix cream cheese and sugar until lump-free in a large bowl (if your cream cheese has become hard, this step may cause lumps). Add one egg at a time while mixing thoroughly after each addition; finally fold in sour cream and vanilla until everything has been mixed evenly.
In a small bowl, mix the brown sugar, cinnamon, and melted butter. This will be your magic swirl mixture.
Layer half of the cheesecake batter onto the crust. Dollop dollops of cinnamon swirl mixture overtop of it and use a butter knife to gently swirl it through. Repeat these steps with remaining cheesecake batter and cinnamon mixture, creating that signature cinnamon roll look.
Put a springform pan into a larger roasting pan and pour water into it with hot water to halfway up its sides (this helps prevent cracks). Bake for 55-65 minutes, or until the center is just slightly jiggly.
Turn off the oven and let the cheesecake cool inside with the door cracked for about an hour. Then, transfer it to the fridge and let it chill for at least 4 hours, preferably overnight.
Mix together the cream cheese, powdered sugar, milk, and vanilla until smooth. Drizzle or spread it over the cheesecake just before serving.
