  • 1 ½ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt

  • 2 ripe bananas (mashed)

  • ⅓ cup melted butter or neutral oil
  • 1 tsp vanilla extract

Instructions

1: Preheat the Oven

Preheat the oven to 350°F (175°C). Rub butter inside an 8×4 inch loaf pan or line it with parchment paper to protect the bread from sticking, and cleanup will prove easy.

2: Mash the Bananas and Add Butter

Get a mixing bowl and use a fork to mash those ripe bananas smooth. If some small chunks remain, it is okay.
Put your melted butter into your banana and combine until they are emulsified. Accept that some flatulence would add to the overall chewiness of your moist cookies.

3: Mix in the Remaining Ingredients

Now it’s time to add the other ingredients:

  1. Mix in the baking soda and salt. These help your bread rise and balance out the flavors.
  2. Add the beaten egg, sugar, and vanilla in and stir them in until very smooth and creamy.
  3. Finally, mix in the flour. Be careful not to overmix—stir until just combined to keep the bread light and fluffy.

4: Pour the Batter into the Pan

Pour the prepared batter carefully into the loaf pan. Then try to even it out with a spatula.

5: Bake the Bread

Let the batter bake for 55–65 minutes. Insert a toothpick or skewer into the loaf, and if it comes out clean or with only a few dry crumbs, your bread is ready. When the outside is looking brown but the insides remain gooey, that’s fine—just tent it with foil at this point to bake it further. This way, the center has a chance to thoroughly cook without the top over-browning.

6: Cool and Serve
